THREE day wedding at wilderness reserve

Sibton Park Estate, Wilderness Reserve

At the end of last year we really enjoyed fully planning and catering the wedding of the wonderful Becci and Nick at Sibton Park Estate, Wilderness Reserve. The wedding took place over three days starting with a drinks and canapé reception followed by a dinner on the Friday night hosted by the team at Wilderness. This was located in the walled garden before the guests headed off to their respective accommodation in preparation for the wedding day!

Saturday Morning

On the morning of the wedding, Nick and his groomsmen set themselves up for the big day with a very bracing swim in the lake followed by a warming coffee and a much needed bacon roll around the fire!

Meanwhile, Becci and her bridesmaids were getting ready in the barn with a glass of Champagne and a breakfast spread provided by our chefs full of bread, eggs and produce from the local Suffolk area. The wedding party then headed to the local St Peters Church, Yoxford accompanied by their friends and families.

Whilst the guests were in the church, the final touches at Sibton Park were taking place. Tattie Rose and her wonderful team were adding in the final hydrangeas and lighting the candle carousels whilst we added the knotted napkins to complete the table arrangements. Our bar team started to pop the champagne for the arrival of the guests for the canapé reception.

The bagpipes set a lively tone as guests streamed in to the house, whilst a string quartet continued the music throughout the reception. Stand outs from the canapé menu included Slow Cooked Lamb Croquettes and Sapling Cured Chalk Stream Trout with Bloody Mary Relish on a Lemon Oatcake. Meanwhile a very exciting surprise was hiding downstairs unbeknown to the rest of the wedding party.

Whilst the amazing BEAT welcomed everyone into the marquee, our chefs, Ed and Annabel, were plating up the guests’ starter; Roasted Spiced Butternut Squash with Burrata and Date Syrup. This was followed by Beef Wellington with a Red Wine Jus, Wild Mushrooms, Pomme Anna and Cavolo Nero. The perfect Christmas wedding feast!

It was at this point that all the guests turned around to see Rafiki from the Lion King entering the marquee followed by a whole entourage of singers and dancers. Neil and the Globestar team absolutely smashed it! The combination of the unbelievable performance and the espresso martini shot with their brownie dessert got everyone up on their feet and ready to party.

PARTY TIME

Picantes and gin & tonics awaited the guests as they entered the orangery with BEAT setting the tone for the evening. The wonderful photographer and our friend, Dominika Miechowska, captured the brilliant dance moves and smiles of the party. Not only that, she managed to photograph the clear-span marquee, provided by Millers Marquees perfectly, twinkling in the night sky. We also decked out the smoking tent with furniture from Array Prop hire to create an apres-ski vibe with heaters and sheepskin rugs to keep the guests warm.

To continue the evening, we handed round duck pancakes, bacon brioche rolls and mac ‘n’ cheese pots to feed the hungry dancers as well as DASH water at the end of the night for those who needed a bit of an alcohol break!

DAY THREE

To combat the sore heads the following day, we organised to have a waffle van, a coffee truck and a Bloody Mary bar. This went down a treat and soon the guests were off doing various activities across the estate such as cold water swimming, cycling the Wilderness grounds, strolling and or relaxing in their beautiful cottages.

In the late afternoon, Becci, Nick and their wedding party, met at Sibton House to walk to the fire feast in the woods accompanied by a brilliant performance from Nick from House of Lemon playing the guitar. The party continued into the evening back in the basement at the main house to finish off an unbelievable weekend!

From the planning, to the menu creation, to the cocktail shaking, the three days became the most memorable weekend for us and all suppliers involved. It was an absolute pleasure to be a part of Becci and Nick’s wedding!
